Snake Gourd / Pudalangai Kootu:

Snake Gourd is very good for health..! It bring coolness to the body. Because of its high water substance, snake gourd is low in calories, fat-free but filling, and great to restrain in weight-loss menus. Snake gourd also contains a lot of fiber which can help maintain your digestive region healthy. The fiber is also helpful for those with diabetes. Snake gourd is a good resource of minerals like magnesium, calcium, and phosphorus..! Eat Healthy and Live Healthy..! :)

Ingredients:

Snake Gourd 2 Medium size Chopped into Small Pieces Evenly

1 tsp. Oil

1 tsp. Cumin Seeds

2 Red Chilies

1 tsp. Asafetida

2 tsp. Chana Dal (Soak overnight and Cook it in a Microwave; or Just Cook it Along with Snake Gourd)

NOTE:

  1.  Avoid Microwave as much as possible, do not use it in a routine basis.
  2.  Instead, we can cook the channa dal and keep it in a refrigerator after drained all the water;(use snack size Ziploc bags to store it).

To Grind:

¼ Cup Fresh Coconut / Frozen Shredded Coconut

2 Green chilies

1 tsp. Turmeric Powder

1 tsp. Cumin Seeds

2 Garlic Cloves Minced / Crushed

Few Curry Leaves (May be 5-6 Leaves)

Steps:

  1. In a frying pan, add oil followed by cumin seeds, red chilies and asafetida; then add the chopped snake gourd and add salt and stir.
  2. No need to add water; cover the pan with lid and cook for 4-5 minutes and then add the ground items.
  3. Cook for 2 minutes or until the raw garlic smell goes off.
  4. Then add the cooked chana dal and stir.
  5. Serve with sambar rice or kara kulambu.

Tips:

Once you added the coconut mixer, do not overcook.
