Vegetable Lasagna

Vegetable Lasagna:

Healthy Vegetable Lasagna Recipe…! Perfect for Potluck…!

Ingredients:

12 Lasagna Noodles

1 cup Ricotta Cheese

1 tsp. Salt

1 tsp. Dried Basil

1 tsp. Dried Parsley

1 tsp. Ground Black Pepper

1 cup Shredded Mozzarella Cheese (4 tbs. mozzarella cheese for garnishing)

½ cup Grated Parmesan Cheese

To make saucy vegetable:

2 tbs. Olive Oil

1 cup Chopped Mushrooms (you can use any type)

1 cup Chopped Onion

1 cup Green Pepper Chopped Finely

1 cup Red Pepper Chopped Finely

1 tbs. minced garlic

2 cups Spinach Finely Chopped

2 cups Tomato Pasta Sauce (If pasta sauce itself contains herbs, then no need to add basil and parsley)

1 tsp. Dried Basil

1 tsp. Dried Parsley

1 tsp. Salt

  • In a fry pan, add olive oil followed by chopped mushrooms, garlic, onions, green pepper and red pepper; fry them for about 3 minutes.
  • Add the pasta sauce, dried basil and parsley.

 To make cheese mixture:

  • In a large mixing bowl, add the ricotta cheese, Shredded Mozzarella Cheese, Grated Parmesan Cheese, ground black pepper, dried basil, dried parsley and salt.
  • Mix them well.

Steps:

  1. In the Large Cooking pot, add the water and bring it boil and then add salt, 1 tsp. oil and lasagna noodles; cook them until nice and tender.
  2. Once noodles are cooked drain the water and keep it aside (separate them to avoid sticking).
  3. Start preparing the saucy vegetable.
  4. Start mixing the cheese.
  5. Preheat the oven to 350 degrees and grease the 9×13 inch backing pan.
  6. Spread 4 tbs. saucy vegetable in the backing pan; then layer 6 cooked lasagna noodles on top of the tomato sauce.
  7. Then spread half of the cheese mixture on top the noodles (spread evenly).
  8. Add 1 cup of saucy vegetable and spread them evenly.
  9. Add half of the parmesan cheese; then layer 6 more lasagna noodles on top of the parmesan cheese.
  10. Then spread the remaining half of the cheese mixture evenly on top of the lasagna noodles.
  11. Then add the remaining vegetable sauce followed by remaining parmesan cheese.
  12. Finish by adding mozzarella cheese at the top.
  13. Bake the lasagna uncovered in the pre-heated oven for about 40 minutes and let the lasagna sit for 15 minutes before serving.
  14. Serve and enjoy.

Tips:

  1.  I used less cheese; if u want you can add more :-) .
